Tasting Notes: Bright straw in color with green hues. Aromas of orange blossom with fresh ginger, hints of honeysuckle and white flowers. Fresh apricot, white tea, dried figs and fennel lead to a creamy mid-palate with a silky, textural finish. The wild fermentation and lees aging gives the wine an extra level of complexity on the palate that belies its age.
From The Winery: Yalumba is Australia’s most historic family-owned winery. The Y Series collection combines authentic Australian winemaking practices with a vibrant approach inspired by modern flavors. While simple and contemporary at first sight, the bright labels show subtle layers when considered closely. Each varietal features a unique illustration symbolizing the relationship between the wine and nature.
Winemaking: After harvest the Viognier grapes are gently pressed and the juices handled with controlled oxidation. Fermentation takes place in stainless steel tanks utilising the naturally occurring indigenous vineyard yeasts. The indigenous yeasts create layers of flavor, complexity and richness. After fermentation the wine remains on lees for three months, adding creaminess and palate richness.
Pairing: Harissa chicken or crispy rice pancakes with potato and chickpeas.
