Tasting Notes:
Color: Bright straw yellow.
Bouquet: Opulent white stone fruits and white flowers.
Palate: Lively and smooth with beautiful flavors of green apples and white peaches on a mineral finish.
Winemaking: Harvesting begins early in the morning to preserve the primary aromas. The grape varieties are fermented separately to maintain their distinctive character. Direct cold pressing, low-temperature fermentation. Our cuvée is based on Grenache Blanc, which brings body and roundness to the wine, supporting the airy freshness of the Rolle. Both Grenache Blanc and Rolle are aged on lees to give volume and buttery notes to the final blend.
Ugni Blanc, with its salinity, complements and counterbalances the generosity of the Grenache.
Legend of Bonpas' refers to the bee wall located at the top of the monks' vegetable garden.
The architecture, both rustic and scholarly, takes the form of a retaining wall of 30 regular niches where the hives were placed. This majestic apiary is the oldest recognized in the Luberon.
